Four Italians are behind a new roving cart business where fresh homemade cannoli is piped and decorated right before your eyes.
Two married couples with Italian backgrounds — Stephen and Danielle Canfora and Johnathon and Rachel Coniglio, of Morley and Bedford — have teamed up to create The Holy Cannoli Cart, bringing homemade cannoli to your next event, anywhere at anytime.
“We are all Italian, hence the idea to create a business where we could share some of the traditional sweet recipes that we have all been so lucky to enjoy,” Mr Canfora said.
Mr Canfora always wanted to start a “side hustle” so he thought he would pair his idea with his strong appetite for all things food.
“When I brought the idea to the everyone, it was a no-brainer; we hadn’t seen anything like it in Perth before so we thought, why not,” he said.
“We lock a date in and you decide what flavours and toppings you would like based on the package you have chosen.
“On the day or night, we set up the cart and fresh pipe the cannoli in front of your guests for them to enjoy.”
As soon as the team started posting about their new food service on Instagram, the inquiries started flowing in, leading them to open up bookings sooner than anticipated.
“It’s a family affair and we are all here to support each other; Rachel makes the custard, John and myself are the piping men, and who you will see at events, while Danielle looks after administration and socials,” Mr Canfora said.
From traditional vanilla custard to ricotta, chocolate, pistachio, lemon and coffee filing, he said the recipes had been passed down through generations.
The crew also add toppings to the hand-piped cannolis for guests to choose from, including peanuts, pistachios, sprinkles, chocolate chips, flakes and crushed meringue.
